Let's begin with the fattening truth. I am not a healthy vegan. In fact, until this last month I was simply an unhealthy and unhappy vegetarian. However, after a bit of a health scare last December I've finally decided to take the leap into disciplined healthy eating. And, damn it all if I'm not going to be happy about it.
So, to make myself accountable to something -- even if no one ever reads this -- I am starting this blog.
Today was a bit of an odd one. I woke up, wrote for several hours (or tried to at least) and then worked out using a pinterest workout since I'm still too lazy to walk over to the campus gym nearby. I don't live in the best neighborhood and I've been letting that fact keep me away from the treadmill for the last few months. Actually, I'm a first semester graduate student studying screenwriting at USC, so I've also let the amount of work I have keep me from exercising too.
I made it my mission to do some healthy grocery shopping today (and to promise myself that I wouldn't eat out again until every last bit of my super-healthy food is gone).
Here's my meal plan for the day:
Breakfast: apple + pomegranate
Lunch: Amy's Vegan Tamales + .5 cup coconut decadence ice cream
Dinner: Protein shake made with hemp protein powder, unsweetened cocoa powder, 1 tbs ground flaxseed, 1 cup coconut milk, 1 individual-size packet of Splenda, a banana and ice cubes. It's the consistency of runny pudding and usually quells my massive sweet tooth (although the banana was only barely ripe, so it wasn't sweet enough).
That's one okay day down. Tomorrow, however, I am making a big pot of Indian Tomato Lentil Soup (Dahl) so that I have some to take with me to my internship on Monday and Tuesday.
Here's hoping this is the start of something great.
